From all of us at KidsFirst, we wish you a year full of love, health, happiness and smiles! I wanted to share this simple but delicious recipe. You can make it in one big dish if you don't have small cups. Vanilla ice cream on the side is a plus :)

Warm Almond Cakes with Dark Cherries


1 cup frozen dark sweet cherries

3/4 cup whole blanched almonds

1/2 cup sugar

1 stick (1/2 cup) unsalted butter, softened

3/4 teaspoon vanilla

2 large eggs

1/3 cup all-purpose flour

1/8 teaspoon salt

Special equipment: 4 shallow 1/3 cup gratin dishes, or 1 big dish


Place oven rack in upper third of oven and preheat oven to 400 degrees F.

Pulse half of almonds with 1 tablespoon sugar in a blender until finely ground. Transfer to a small bowl and repeat with remaining almonds and 1 more tablespoon sugar.

Beat together butter and remaining 6 tablespoons sugar in a bowl with an electric mixer at high speed until pale and fluffy, then beat in vanilla. Add eggs one at a time, beating well. Reduce speed to low and add in ground almonds, flour, and salt until combined.

Divide batter among gratin dishes or pour into one big dish. Lightly press frozen dark sweet cherries into batter. If using small gratin dishes, place dishes on a baking sheet. Bake until cake is firm and a pale golden color with slightly darker edges, about 20 minutes.

Transfer cake to a rack and cool slightly before serving.
